Well, if you fill out the online form, you'll see that they only admit alphanumericals, so 'n/a' is not acceptable, 'none' is a better choice for those you have to explicitly specify. Some fields are in special formats, e.g. phone numbers have to be in numbers.
Try as much as you can in online forms, then translate into Chinese.
Even if the form in Beijing Embassy posted has both English and Chinese, the generated PDF will be in English only. Barcode will be generated even if you have blanks.

我刚签完,我的DS-156,7,8表中有许多地方都是空着的。比如传真号码之类我没有的项都空着。
